We worked in three different continents in different kitchens. There was one defining feature as an indication of quality for all the places we worked: respect and connection with the products you work with and the customers you serve.

For us that means knowing the farmer, being exited to tell the story behind our food and then preparing dishes with the utmost care.

Birdflower is all about respecting the season, using what is locally available. Making everything homemade and from scratch. Which is why we use traditional techniques such as: fermenting, pickling and curing enabling us to use delicious products all year long.
